Custom Chef's Set Knives and Block

An elegant and tasteful set, this Chef's set is custom made for the kitchen. The blades are all 440C high chromium martensitic stainless steel, chosen for high wear resistance and a great reputation. The blades are all hollow ground and mirror polished for high corrosion resistance and easy cleaning. The blade tempers vary to their use; the thin and springy boning knife is less hard and more tough, the thicker La Cocina is harder and less tough. All of the blades have matching full filework and fully tapered tangs. The bolsters are all 304 austenitic high nickel, high chromium stainless steel for the ultimate in toughness and corrosion resistance. They are all dovetailed and bed scales of rich Larvikite with is a syenite containing large crystals of anthorclase which display a beautiful blue-gray schiller and iridescence. Thus the alternate name: Blue Pearl Granite. This rock was intruded during the Carboniferous period, so is about 300 million years old. It is very tough and durable, taking and keeping a great polish. The knives are my Vega master chef's knife, my French Chef Sabatier, my serrated Bread knife, the La Cocina fruit and utility knife, my Boning knife, and Paring knife.

  • Paring knife: The Paring knife is just the right size for the hand and comfortable to hold.
  • "La Cocina": The La Cocina has the thickest, hardest blade, for very durable cutting, fruits, nuts, and utility uses
  • Boning knife: The boning knife is very thin and tapered and will also work well for filleting.
  • French Chef's Sabatier: The French Chef's Sabatier is a classic style of knife, with a very sharp usable point.
  • "Vega": The Vega master chef's knife is a new classic large and thin knife that is perfect for vegetables and meats.
  • Bread knife: The Bread knife has my custom hand-cut razor sharp serrations that sail through hard, crusty breads with no tearing.
  • This is a serious, well made custom set in a custom made matching fine block.

The block for this ensemble is extremely strong and durable. I made it from Pecan hardwood, one of the hardest and toughest woods known, a close relative of Hickory, with American Black Walnut spacers. The block has dedicated spaces for all six knives, and is fashioned in a stair-step radial shape for a tasteful display. The woods are oiled and waxed for longevity, and the flat faces of the block are capped with ground, lapped, and polished panels of Larvikite to match the handles.

Note fileworked choil "Chef's Set" La Cocina. A very popular knife style, universal use and appeal. Note the wide and deeply hollow ground and mirror polished blade "Chef's Set" Boning knife. Knife has tough temper, lightlly trailing point design for very fine work "Chef's Set" Bread knife. This knife has "theatre curtain" serrations, which slice through the toughest breads with few crumbs "Chef's Set" French Chef's knife. This knife is a traditional Sabatier style blade, with a thin hollow grind and good length. Handle is comfortable and corrosion free "Chef's Set" Vega master knife. This is a large and substantial blade, worthwhile for the largest cutting chores in the kitchen
